Cooking for Community

This week IEDPers got together to make meals to share in The People’s Fridge (@thefridgeon52nd), a community fridge established as a form of mutual aid to provide access to food and water to anyone who needs it in West Philadelphia. Anyone is able to share what they want and take what they need.

We gathered at Penn Women’s Center to prepare turkey and swiss sandwiches (dairy and dairy free), vegan three-bean chili stew, pasta with marinara sauce and an assortment of cookies. We were able to make a total of 45 meals!

We had a blast preparing the food and sharing it with the community. Special thanks to the staff of Penn’s African American Resource Center for cheering us on throughout the cooking process and joining us for a meal taste test.

Here’s the recipe for the Vegan Three-Bean Chili Stew we made (adapted from No Spoon Necessary).
Ingredients:
2 bell peppers (diced)
2 serrano peppers (diced, leave in seeds)
2 yellow onions (sliced)
1 can black beans (drained)
1 can red kidney beans (drained)
1 can vegan refried beans
1/2 can fire roasted tomatoes (tomatoes only no liquid)\
1 small pack of frozen corn
Vegan no chicken better than bouillon
1 tablespoon fresh squeezed lime or lime juice
Tomato paste
Olive Oil
1 1/2 cup of water

Spices:
2 teaspoons Ancho chili powder
2 teaspoons garlic powder
3 bay leaves
Salt & Pepper to taste

Instructions:
1. Brown slice yellow onions in 2 tablespoons of olive oil.
2. Once yellow onions brown add in diced serrano peppers and bell peppers.
3. Once peppers soften, add in 2 tablespoons of tomato paste.
4. Sautee vegetables and tomato paste together, but be careful not to burn.
5. Add in 1 and 1/2 cup of water along with 1 tablespoon better than bouillon vegan no chicken base.
6. Add in drained red kidney beans, drained black beans, and frozen corn pack.
7. Add in vegan refried beans. Mix.
8. Add ancho chili powder, garlic powder, and bay leaves.
9. Bring everything to a boil then reduce heat and let simmer/reduce for 30-40 minutes until thickened.
10. Add lime juice, salt, and pepper to taste.
Note: If you prefer non-spicy version, please remove serrano peppers or reduce down to 1 pepper only for a little spice
